Chef Rabih Fouany

With over 15 years of experience at Phoenicia Hotel Beirut, Chef Rabih Fouany has taken the helm at Le Vendome’s acclaimed restaurant, Sydney’s. He is a member of L’Academie culinaire de France, culinary instructor of the AUST University and fourth place winner of the “Trophee National de Cuisine et Patisserie – Paris 2006”

Inspired by Sydney’s breathtaking sea views, Chef Fouany introduced a combination of fresh and organic elements to the Sydney’s menu, including a special Mediterranean touch with the soul of nouvelle cuisine. “I want to invent more delicate dishes with an increased emphasis on presentation,” as per Chef Fouany, who loves to travel to discover different cuisines that can inspire him in creating a unique dining experience.

Rawad’s extensive background in customer service enables him to deliver, alongside the Sydney’s team, an authentic culinary experience complemented by welcoming and professional service. As per Rawad “ My goal is to change the perception of Sydney’s from an occasion-only destination to a much loved locale where people can drop in, enjoy themselves, and receive exceptional, personalized hospitality.”

Rawad joined Intercontinental Le Vendome in 2002, working his way from position of waiter at French gastronomic restaurant Au Premier to gain experience in every front-of-house job. During this period he acquired knowledge of all aspects of the restaurant environment, spent time working with Michelin star chefs, and earned a degree in management information systems. In 2013 he moved to Sydney’s restaurant as assistant restaurant manager, before being promoted in mid-2016 to the position of restaurant manager.
